It's late July here on Aegina island and the fig trees are laden with bright green orbs. It seems that the fruit ripens to plumby purple by the hour. As we go to the sea for our swim we pick a handful to take home for our breakfast.
Here's one of our favourite recipes before we're resorting to jam when we can't keep up with the bounty.
A lassi is the Indian version of smoothie. This one combines the sweetness of figs with the tang of yogurt and a peppery finish from the high phenolic EVOO.
Ingredients:
- 2 ripe figs, quartered
- 1 cup plain yogurt (Greek yogurt works well too)
- 1/2 cup cold water
- 1 tablespoon honey (or to taste)
- Pinch of ground cinnamon
- Pinch of ground ginger
- 1-2 teaspoons Aristoleo+ PowerShot
- Fresh mint sprig, for garnish
Drizzle Aristoleo+ PowerShot or spritz Aristoleo+ MicroDosing after blending to prevent hydrogenation and preserve its health benefits.
Instructions:
- In a blender, combine the figs, yogurt, water,, honey, cinnamon, and ginger. Blend until smooth and well combined.
- Add high phenolic EVOO after blending
- Taste and adjust sweetness with additional honey if desired.
- Pour into chilled glasses and garnish with a mint sprig.
